A world of excellent truffle honey french toast exists in the same universe as the posh lobster croissant in this quaint eatery along gentrified Seah Street.
Brunch, is the ultimate meal to have when the weekend comes around and has eclipsed every other meal when it comes to where diners are spending their dollars. Bridge restaurant and bar, joins in the masses, offering up this popular, affordable luxury with a different twist.
A croissant, while delicious on its own, is rocketed sky high with a healthy serving of poached lobster, creamy scrambled eggs and wilted baby spinach amongst many other things. The Lobster Croissant ($36) is one for the palette accustomed to luxury, the scrambled eggs retaining delectable moisture between wet folds, bacon and seasoned sauteed spinach jostled between the lips of a toasted croissant adding fuel to the discussion. Do not dismiss the meslun salad on the side, a gentle toss through truffle honey vinaigrette elevating its humble status.
The same can't be said about the Bridge benedict ($20) - the only justification for its insanely hefty price tag provided by the employment of black forest ham in the act. Champagne is used in the making of the ubiquitous hollandaise sauce resulting in an ultra light and aerated yolk emulsion. Somehow or another, I can't quite agree with the serving vessel. The black slate impractical in containing the lava flows of the poached egg when broken into, so work fast to avoid losing valuable assets to the wooden tables.
One of my favourite dishes on the menu is the Truffle Honey French Toast ($18). There are fresh berries amongst thick slices of custard infused brioche pan fried till crisp edged and golden brown. The hints of truffle infused honey amidst comforting dustings of cinnamon sugar raising the dish from rags to riches. Bravo, Bridge.
A wholesome little bowl of ingredients is the 62˚C Organic Egg Prosciutto ($17). Here, Sous vide egg meets creamy, lump free truffle mash potato, fragrant sauteed wild mushrooms and generous slices of prosciutto di parma. A drizzle of chicken jus tying all the loose ends in. Everything you could want is on there, and works brilliantly together.
Order another coffee and don't miss desserts. The Deconstructed Cheesecake ($14) is a brilliant dessert combining the efforts of homemade raspberry jam, passionfruit puree, cold parfait, lemon cream and cheese foam in a flavor smackdown. This will have your sugar craving sorted till tea time.
Note that weekend brunch sessions at Bridge runs from 11am - 3pm on Saturdays and 11am - 4pm on Sundays.
