A time-warp happened within the first few seconds of being seated in the darkened inner sanctums of Mikuni. Flashbacks to my last "Doyo no Ushi no Hi" menu in 2016 under the tutelage of Chef Moon Kyung Soo and that glistening coat of sticky glaze on charcoal grilled eel. I coo-ed. It was superb. However, a lot of things have changed over the last two years. One of the most major - Executive Chef Keisuke Uno taking over the reigns and breathing new life into the extensive menu of kaiseki, sushi and sashimi, teppanyaki and robatayi offerings. Another would the addition of outlet manager and sommelier Ryuta Yamada to the team. Fortunately, I was extremely blessed to be able to experience his prowess in wine and sake through a rather intriguing wine and sake pairing that was purposed to sing in harmony with the Summertime Unagi Treat.

If you've heard rumours about a joint up in the East that does a 8-course Omakase at just $48 (also available at $88 and $128 options), chances are that it is newbie, Rakuya. And boy, do they do it with pizazz.

There is an air of nostalgia as I entered the cylindrical fashioned, moody realms of the restaurant, Le Binchotan. Yet amidst the somber nature of the space, there's a spark of excitement in the air, Chef Jeremmy Chiam's impish smile affirming rumours. Taking over the reigns of the restaurant, it's outwardly apparent that new Chef-Owner, Jeremmy had a new spring to his step.
Le Binchotan, known for it's manifestation of modern French-Japanese cuisine in the back alleys of Amoy Street has had a new fire lit under its ass and with that comes swooshing in, promises of something fresh, vital and extraordinary. With great mental resistance, I consigned my previous experience of the restaurant to oblivion - after all, everyone deserves a second chance.

If you're looking for the best maki in Singapore, Kinki won't be it. But if it's #makiwithaview that you're seeking, the casual establishment sporting stunning panoramic view of the bay area sees little competition in this aspect.
Kinki is famous for two things: their makis and Japanese anime decorum which translates into their convivial dining atmosphere. The space makes use of the abundant natural light and their open-air entertainment quarters on the top deck to shake off the austerity and stuffiness shrouding the dining establishments in the bay area. It's important to note the beverage offerings; this is first and foremost an after-work watering hole. Once you're seated, a spirited menu packed with refreshing sakes and fizzy beers is called to your attention. I would admit that it's either an old-school dining sensibility or a money-making strategy. Needless to say, we welcome the gesture with open arms (and livers), and order carafe of Echigo Tsurukame Junmai from Niigata prefecture. One does have to whet one's appetite, after all.
BAM! - It's Monday, for goodness' sakes. hurray.

Monday, sucks, period. That is, until you remember that we share a city with a bunch of roving alcoholic devotees; you'll never be shortchanged of the best drinking deals in town even on the bluest day of the week. When it's all too much to deal with - the smoothest libations, the cosiest nooks and rich bites - BAM! is there to cosset you in ingenious fare and put out that raging fire with sparkling cool bottles of the best sakes.
Venture to conspire after a tumultuous day at work at BAM! where they do a Sake-Tapas Tasting every Monday from 6 - 8pm. It's not the generic over-the-counter-top kind of sessions, instead, revel in a full-fledged congruous pairing of 5 sakes and 5 tapas at S$48++ per person. (note, teething issues have been ironed out from it's launch on the 5th June and better pairings have been implemented). Spanish Chef Pepe Moncayo may be a through-bred, but his dishes provides a pleasing break from tradition with his fastidious ode to 'Modern Shudo' where sake is employed to bring out the umami flavors in food; this paves the way for toothsome bites. Dishes are unmanned by a specific country or cuisine, instead they are all presented with the finesse of Japanese Teishouku, small but power packed.

I remember the first time I visited the Suntec City branch of Sumiya (read my previous post here) - all eyes lit up when we spotted the gleaming elephant in the room. A spotless temperature controlled Sake dispenser that taps 16 different varieties of Japanese fermented rice wines from taps at the command of a key card - a seemingly illustrious process up til the bill shows its associated tabs afterwards. But for now, let's dine with no care for consequence, shall we?
