Settling in to certain opulent and grandeur settings in Royal Pavilion's main dining room may be a bit intimidating. But the solid and stalwart service standards immediately fixes that and put us at ease. In line with their modern Cantonese out take, courses are dished out in individual portions, each presented with finesse and looking just a little too pretty to eat.
From our insta-worthy starters of Pan Fried Hokkaido Scallops and Pan Seared French Foie Gras to the belly-busting finale of Signature Fried Rice with Assorted Seafood and Shrimps; everything was rooted by tradition yet breathed new life into by the Chef's innovative techniques.
Fans of traditional cuisine will not want to miss out on the Spinach Tofu with mushrooms and dried scallop broth, each spoonful of that tender homemade tofu, warm and comforting.
A must have at Royal Pavilion will have to be the Royal Pavilion Signature Smoked Duck ($38 for half), glossy crisp skin capping succulent flesh yielding a light touch of smoky perfume within (the doings of lychee wood). The gingerly deboned serving showcasing prowess in the kitchen.
