Tonkotsu Kazan Ramen: Signature Volcano Ramen and a [GIVEAWAY]

"Order the Kazan Ramen," the PR mistress beckons via text. Impervious to her pleas, I browse through the menu, setting my sights on the chashu karamiso ramen at first, only to be distracted by a mere glimpse of the next page - a firewall display of smoking chimneys and black claypots of bubbling ramen. "OOoooo" Could it be? Did she mean these? - at this juncture, there was no turning back; the impressive poster stealing our hearts and guts instantly. 

The signature Kazan Ramen served in stonepots to maintain its sizzling hot consistency may seem like a gimmick to some but I can assure you that in some ways, this method of service does have its merits. For starters, the stone bowls are preheated to a whopping 300 degree celsius and ingredients neatly arranged within; once at the table, the waiter will then proceed to pour in half the soup and slap on the funnelled lid, VOILA! volcano eruption! or essentially steam generated from the fiesty interaction. Let it cook for a minute and you're ready to eat.

Anymap: What sets your blogging style apart from other food bloggers?

Fundamentally_Flawed: Honesty is the best policy. And I guess it's in this department that I differentiate myself from most other food bloggers. Pertaining to food establishments that make false statements about the preparation methods or provenance of their food, they may get away with pulling the wool over most diners' eyes, but there's no fooling me. I will, and have called their bluff, too many times to count. The harsh brutal reality delivered as feedbac to owners and chefs is something that I pride myself on as constructive criticism should work in improving a business.

Meantime, all that talk about pizza is making me hungry. 

Recently, I've had the privilege of working with the dynamic team from FeastBump, a platform that features over 200 restaurants that deliver to you, wherever you are based on this island. From exotic dishes to healthy eats and high end pastries, FeastBump has got you covered, sussing out the most convenient solutions to restaurant quality food.  First conceptualised by the creators of Oddle, a cost effective backend solution for restaurant's takeaway options; the team after being tormented by a lack of food choices that deliver to their workplace have since diversfied and set up a seperate platform offering food delivery and listing of their existing merchants on this new platform. To that, I say brilliant! and gave the system a whack.


My order meant for 4 30pm arrives earlier than expected at 4 00pm (not a bad sign). Those who hangout at Timbre would be familiar with the pizzas I'm about to feature. The Goodfellas ($20.50) is a quizzical combintion of plump shrimp, garlic butter curry sauce, crisp cereal under a bed of melted mozarella cheese with a final flourish of egg crumbs. The verdict drawn was universal, "weird" being its main definition, the crust pizza dough and further smashings of egg crumbs drawing out moisture from the plump prawns leaving them high and dry. Working to better effect is the Roasted Duck with Hoisin Sauce ($20.50) - classic combination of duck and sweet sauce reaffirmed here. abetted by scatterings of shitake mushrooms and crispy popiah skin. There's no resisting this pizza here, even more so with a bottle of beer at hand. Other pizzas worth fawning after include the Beef Con Carne Pizza and the ridiculously fusion Black Pepper Crab rendition.

[The Entertainer App GIVEAWAY] Pappasan: Watermelon Sangria

If you're a big fan of the Entertainer App, we've got good news for you! The 2015 version will soon be launched in Mid November and as a sneak preview, we got to sample some of the offerings from PappaSan, one of the new merchants to be featured in Entertainer Singapore 2015. 

For those of you are unaware of the lucrative savings and scrumptious deals associated with the app, I implore you to look at some of my personal dining experiences at the following merchants, The Roundhouse, Fat Cow, and Chez Petit Salut. But to cut to the chase, The Entertainer Singapore gives subscribers access to all 770+ '1-for-1' offers to some of Singapore's hottest restaurants, nightspots, informal dining spaces, spas, activities, attractions and more. With 3 vouchers per merchant, you can pay a visit to your favourite listings more than once! Evidence of my loyalty to the app can be seen in the figures below. Yes, cause numbers don't lie!


To kick start the evening, there were Watermelon Sangria shots in a watermelon, I refuse to approve the term 'shots', instead using a pint size glass to store the luscious liquids. The decapitated melons lining the decked out tables, held a mixture of fruit cocktail and wine infused juice; a sip of this will certainly get the party going. This was an introduction to the new Watermelon Sangria Tapas Fiesta (a package worth 98++ for 2 pax and starting at 438++ for a party of 10 and above); the deal includes five delicious small-plate special hot tapas to aid the festive alcohol ingestion. Certainly worth checking out if you're accompanied by a rowdy bunch and want to be spared the agonising wait between drinks for everyone to decide on their food orders. 


The Succulent Beef Tenderloin Skewers behaved true to description, juicy cubes of tenderloin soaked to the core with a herbaceous marinade and then licked by hot flames on all sides. The char grilled marks, a good contrast to the slight sweetness resulting from the beef's luxurious bath.





If you like your garlic, turn your sights to the Prawns with Tomato and Italian Gremolata, the sauteed fresh prawns cooked to bouncy perfection, the aromatic gremolata giving the prawns a flavor edge and the cliched topping of parsley lending a hand to the dish's profile. I should have stuck it out and piled my plate high with these firecrackers, just 4 of these left my tummy hankering for more.


Lemongrass Chicken Wings adds to the pageantry of the spread with it's deep fried factor. Pity that these were just a tad overcooked and under seasoned; the golden crusted poultry crying out for the aid of a creamy dip to salvage it's forlorn state. 


Another dish whose looks presides it's actual taste was the Crusted Chicken Rice Balls, as much as the concept is novel, the deep fried panko crusted mounds of chicken rice enveloped dry and tough bits of chicken. 



Dinner continues with a bit of theatrics, the Mullets are wheeled out. Covered in a mountain of salt and set ablaze with brandy. Touted as the Snow Mountain Baked Fish ($48), this age old Italian technique of cooking fish with a heavy crust of salt guarantees a moist and perfectly seasoned fish almost all the time. Unfortunately, what we received must have been the oddment of this promise, the fish lacking in seasoning and dry despite the Chef's conscious effort to stuff it with garlic, onion, ginger, chilli and lemongrass. 




The rock 'n' roll concert continues with the Whole Roasted Crispy Suckling Pig ($268, available only on pre-order). As tradition calls for it, as testiment to the pig's crispness, two lucky diners had the privilege of chopping the baby pig up with the edge of a regular dinner plate. The brashness of each move coupled with the gentle crackling of bones like music to my ears. The experience unfolds in waves of gustatory pleasure, the flesh of the pig, gelatinous,succulent and sapid from the liberal use of Portuguese special herbs. Pry open the hungry lips of a fried mantou and fill it with the likes of coleslaw, pork crackling and suckling pig dipped in a fiery sweet, chilli padi flecked dark soy mixture and you've got a winning formula. My only gripe would be that the glass-like wafer thin skin could have used a tad more salt to enhance it's flavor.  But other than that, this dish indulged me and all my food fetishes.





The final flourish to the meal was the stereotypical chocolate lava cake, the twist lying in rather unorthodox brandishing of orange caramel sauce and cubes of mango. A sweet move to tighten the deal.


PappaSan is just one of the new merchants to be joining the entourage of The Entertainer App's  2015 versions and I, for one, am eagerly anticipating the exciting line-up for participating merchants to be revealed soon.

The Ugly Cake Shop: Sweet nothings and a {GIVEAWAY}

From one 2-in-1 foodie and baker to another,  one can be sure that Lisa Tan knows what she's talking about when it comes to cakes. Her labor of love, the Ugly Cake Shop churns out confectioneries both toothsome to the palate and sweet to the heart; armed with a belief to spread the love, Lisa has pledged to donate 20% of the proceed to support the meals of undernourished kids in Timor-Leste. Delicious artisanal cakes for a worthy cause.

One thing to note, if you do have pre-conceived notions about cupcakes being just dried out mini cakes with a ton of sickly sweet frosting over the top, be prepared to have these challenged when you get a load of Lisa's handmade versions. Using only high quality basic ingredients such as cocoa powder, butter and chocolate, the results speak for themselves in the form of rich, moist petit cakes that are even addictive on its own. Lisa then kicks it up a notch, employing her marvellous pastry skills to produce silky smooth frostings, both ganache and Italian meringue buttercreams which leaves a pleasant mouth-feel (accompanied by numerous eye-rolling motion).


Some of her signature flavors include Zesty Zee ($4 per cupcake and $55/7 inch, $70/9inch). My personal favourite, Sally, featuring an indulgent dark chocolate cake crowned with a delicate wisp of peanut butter frosting, a little salt thrown in for good measure. Cross over to the dark side with her Big Daddy Junior ($3.50/cupcake), guaranteed to please any chocolate snob in the room.


Another crowd pleaser is the ever so popular salted caramel cupcake named Juliana, recent R&D efforts in the kitchen have blessed these beauties with a magic dusting of sea salt flakes, pushing this creation across óut-of-this-world' boundaries.


Melissa is the newest addition to the group, made similarly out of an addictive dark chocolate cupcake base christened with an innocent looking strawberry frosting, hiding a deep dark secret of its salacious hook up with rum.

{GIVEAWAY} Food Panda: The Mexican fiesta and a Giveaway

Recently, I had the fortune of doing a write-up for a food delivery service which had launched its domain in quite rampant attack in Singapore. Started off in Berlin, the small team had the intention to provide an all-rounded service and the most powerful online tool for food delivery in the universe (Love their ambitiousness). At present, the team has expanded to cover more grounds; namely, 15 more countries in a just a few short few months!

Here in Singapore, Food Panda has managed to rope in a staggering 129 food outlets to collaborate with, consisting of quite a few Indian restaurants, Mexican joints and some other more exciting establishments like Chilis, Outback Steak House and more. With this figure constantly on the rise, I was sure spoilt for choice when it came to deciding on a single establishment to satiate my hunger. Having secured an in-house dinner companion for the lovely Sunday evening, I proceeded to order for the both of us.

Honestly, navigating the system couldn't be any more foolproof. Steps are as documented on the site. Upon entry into the site, you are prompted to key in the postal address of your current locality so that the servers can rank and better isolate the food providers nearest to you (hence resulting in shorter delivery times). After that is done, go ahead and pick from the wide array of choices of restaurants and browse its menu even! Save for my whims for Mexican food that night, I surely would have been lost debating my choices that night. Fresh Baja it was.

Upon confirming and submitting my order (Hit the button 'ORDER NOW', and payment can be made via cash upon delivery or paypal!); I was hit by a barrage of messages (SMSes and emails, two pronged attacks), containing the legit details of my payment confirmation, order receipts and all. How assuring... despite it's excessive nature. I received a call shortly that really took the icing off the cake. From a Gavin from the Food Panda team, the call was a verbal confirmation of my order and a query regarding my queer message to be given notice should the order be delivered earlier to my doorstep instead of the stipulated 1.5hr as suggested on the site. He took to explaining that a window of 30mins should be allowed given that the pre-orders were taken before the kitchens open for dinner hence leaving them questionable to food delivery times should there be and influx of pre-orders coming in. The level of commitment to provide a smooth food delivery from Food Panda was sure looking very impressive at this point of time. All even before I took my first whiff of the food!

Sadly, the night's arrangement met with a slight hiccup when my dining companion called off the appointment, leaving me stranded with an enormous surplus of food on my hands. Imagine my disappointment delight, when I found out that I was being left alone with all that Mexican fiesta of a meal after a tedious heartbreak (don't ask) on a lonely Sunday evening. Things couldn't possibly get any better.

The wait for the food ensued, and sure enough, the food arrived in a little over an hour. Packed neatly into bags and containers of different sizes, unwrapping all these was similiar to a Christmas day. I ordered the Chicken Grande Quesadilla ($20) and Char Siu (pork) Baja Burrito ($20) for tasting. To my delight, both turned up spiffingly hot at my doorstep. the former with accompaniments of sour cream and homemade guacamole on the side.

The Char Siu Baja Burrito was more to my liking, the succulent braised pork amidst it's wrap with freshly sliced lettuce, pico de gallo (salsa fresca), a dallop of guacamole and all that melted Monterey jack cheese plastered warm flour tortilla. The orchestra of flavors creating a blanket of warmth, one that I familiarise myself with only on my single rest day in the week. The same can't be said about the Chicken Quesadilla, the char-grilled chicken hidden below the pressed tortilla in stingy portions and to make matters worse, parched dry. I was not a happy camper with this one. That aside, the dips that came with the tortilla chips were excellent. Though barely unrecognisable to me, I singled out some sort of olive tapenade, another red pepper type dip amongst the riot of flavors and colors.

In all honesty, this isn't probably the best representation of Mexican food you can get around here. To satisfy your Mexican cravings, turn to Piedra Negra at Haji Lane or head on down to MexOut for their fabulous cochinta pibil corn tacos.

Food Panda, as a food delivery service however has sure knocked my socks off. Offering a staggering selection of food establishments, one can be sure of finding something appropriate for that stay-in Sunday or that small office party. Takeaways have never been so convenient nor flavoursome.
