It's easy to build a killer menu from a bunch of gastronomical accessories and premium ingredients. But to build a restaurant's menu on the backbone of Japanese cuisine - dashi - is anything but derivative. Nami in Shangri-La Singapore does so with guns ablazing, and in doing so, challenges culinary boundaries of the eating out folk.

There isn't any fancy pleasures more profound than a good slice of sourdough in the affable company of room temperature butter. The new Bacchanalia and I, got off to a good start with the impressionable introduction that involved one, too many bubbly slices christened with a firm crispy crust, singing a resounding sour note to the salty harmony of seaweed butter. And this was no ordinary seaweed butter, it's textural landscape undulating with pops of umami, as if with the hum of sea grapes. If you're one to judge a fine-dining establishment by its complimentary bread, Bacchanalia will you make you very very happy.

As much as I was put off by the tag-line of 'endorsed by A-List celebrities as their go-to burger joint', I could understand what was the fuss about. Rich burgundy hued wallpaper, black leather booth seats and just enough natural light streaming in. If the Los Angeles branch emulates the same feel, it would probably be the perfect spot to be captured devouring a heavy stack while still sporting a cropped top revealing chiseled abs underneath - cue the headlines "How __ Stays Fit - While Modelling and Eating Burgers". oh pls...

Sky22 @ Courtyard by Marriott Singapore Novena: more than just dining with a view

Throw a stone and you'll probably hit a restaurant that banks its reservation list on glamorised decor and stellar views of the metropolis. But the number of restaurants that actually serve up food that is befitting of its ludicrous inflated price tags are few - the new Sky22 being one of the handful that finds a righteous balance between being your business-savy hotel restaurant with mediocre International offerings and a casual dining joint that attempts to keep things playful without being flippant.

Located on the 22nd floor, Sky22's expansive floor to ceiling windows with unobstructed views of the city is an instant selling point. The restaurant pays serious attention to detail, the professional reception area transitioning seamlessly into the casual-chic dining room after traversing past cascading water features and beach-esque wall dividers. Food wise, the hotel does the conventional International buffet spread for an affable $38++ per person with a good selection of meats on offer. The roast pork, I must admit was pretty delicious, crackly roofed and succulent based. The Ala-carte selection on the other hand does have its appeal, ranging from sharing plates to Singaporean delights and innovative mains. Something for everyone.

Clearing my throat and attempting to get rid the ear barotrauma that had developed from the swift elevator ride up to 62nd floor of One Raffles Place Building; the cool gust of air that greets me at the tip of the spacious natural light awashed dining room worked wonders in refreshing the senses instantaneously.

The purpose of my visit, to explore Chef Christopher Millar's brand new nip tuck culinary program featuring Tajima Wagyu which the restaurant now painstakingly sources and wait for it... rears their own cattle at Australia's premium Wagyu farm Tiana Park (NSW). Talk about dedication to curating the best produce! This process devising a canny way of getting back in the media again. We're talking the opportunity to feature a myriad of cuts (both secondary and premium) in mixed fashion and with the added flexibility of dry-aging at your own will; Chef Christopher Millar has definitely got it all figured out.

Le Binchotan: French-Japanese tapas with a mean cocktail bar @ Amoy Street

Perched behind closed doors... Yes... that seems to be the trend nowadays. The presence of open-air brasseries with doors flung wide open, a thing of ancient history. Yet another dining concept to join the ranks is Le Binchotan, BurgerJointsg's not-so-simple girl next door. Here, Chef Atsuhiko Hagiwara from Ginza Tokyo restaurant En.Terrible together with Singapore Head Chef Jeremmy Chiam churn out a sophisticated bar menu with a Japanese touch and a special homage paid to the technique of smoking meats and seafood over bincho-tan (white charcoal).

By lunch, the dark den offers a much-needed respite from the hard-knocked life awaiting most executives on the outside. Lunch sets range from $38+ for 3 courses to an affordable $48+ for 4 courses with the added luxury of having one of the city's more talented bartenders Sugar Ray Ruban (previously of Cufflink Club and Vasco) mix you a stiff one to while away the remaining dreary afternoon.
