Tok Panjang, a long table CNY heritage feast at Folklore

Like a breathe of fresh air, Folklore celebrates Lunar New Year with Tok Panjang -  a lavish heritage feast sprawled out over a long table - a ritual at Peranakan households meant to mark special occasions. Here, there are no traces of the stodgy peng cai nor tacky heaviness of nian goa (apologies if I've stepped on anyone's feet with that remark. Do note that I do love a good Nian Gao), instead, the tabletop is covered with 15 heritage dishes prepared true to Chef Damian's Peranakan maternal grandmother. Talk about embracing the communal spirit, Folklore's Tok Panjang has got it down pat.

Clearing my throat and attempting to get rid the ear barotrauma that had developed from the swift elevator ride up to 62nd floor of One Raffles Place Building; the cool gust of air that greets me at the tip of the spacious natural light awashed dining room worked wonders in refreshing the senses instantaneously.

The purpose of my visit, to explore Chef Christopher Millar's brand new nip tuck culinary program featuring Tajima Wagyu which the restaurant now painstakingly sources and wait for it... rears their own cattle at Australia's premium Wagyu farm Tiana Park (NSW). Talk about dedication to curating the best produce! This process devising a canny way of getting back in the media again. We're talking the opportunity to feature a myriad of cuts (both secondary and premium) in mixed fashion and with the added flexibility of dry-aging at your own will; Chef Christopher Millar has definitely got it all figured out.

Remember the bohemian space, like a dingy pub gone rogue that once churned out the darnedest Christmas menu I've ever laid eyes on? (read about it here) They've returned with an equally lunatic deal for the satisfaction of the fairer sex whilst their other half does the usual pub-crawl to placate the dog-tired humpday spirit. 

Every Wednesday from 8th June 2016 onwards, ladies get to enjoy a glass of Perrier Jouet champagne followed by an exclusive three-course dinner menu specially crafted by the deft Head Chef Nick Scorpion, finished with a chaser of sweet nothings in the form of a dessert cocktail pairing. Read, cocktail and dessert inclusive, for a tight package of just $50++. OH...Oxwell and Co; you've got other business owners wagging their droopy tails in bewilderment. But then again, being on the receiving end, you'll come to realise that this deal is indisputably worthwhile.

Chinese New Year arrived in a torrent of auspicious dishes and mad tossing of yu sheng. I won't brag, but by the time Christmas arrived, I had already raked the sweet sour concoction 5 times at various establishments. Despite the many frivolous moments spent at the round table, I distinctively remember one restaurant which managed a record-setting taste triumphant attempt at every signature dish served up.

For those celebrating Christmas in sunny Singapore... my heart goes out to you. Sure, we don't have white Santas on every street corner, nor reindeers or even the slightest chance of snow. What we do have is food and plenty of it. My next few blog posts will display the lucrativeness of this festive period, covering everything from burgers, festive sundaes to gorgeous terrarium creations; some good, some bad and some down right ugly. With Christmas only coming in once a year, and people marginally more generous and good spirited, why not cash in on this holiday season? There's no debating this annual mandatory plot.

Let's kick off the merrymaking with a trip down to Angelina which promises a warm rustic French Christmas with its festive menus. Available daily till the 31st of December, it's 3 course set menu priced at a wallet friendly $60++ comprises appetizers such as the Chestnut and Maderia Veloute or the Pan-Seared Foie Gras with rhubarb compote and fruit toast. The former, perfumed with the warm aroma of toasted chestnut does bring to mind a joyous celebration in front of the fireplace, the slight tipple of Madeira into the smooth concoction bestowing the dish with a silky rich edge. Those seeking something a little heavier on the palate should veer for the latter, reinforced by a sturdy slab of perfectly seared foie gras that would have left an oil slick in your mouth if not for the puckering sour rhuarb compote. Baked Angus beef au poivre with Forest Mushroom Fricassee fills in as an excellent main, though I admittedly would have loved a little more salt rather than black pepper crusting my steak as the overall combination of peppery mushroom fricassee rendered the whole dish a pepper wasteland. Other options include the walnut crusted halibut or baked duck breast. The ominous glare from the words 'Dessert of the Day' throws everyone off guard; I honestly can't vouch that you would receive a lovely surprise package. All you can do it hope and pray that there would be a citrus cheesecake of sorts that miraculously finds it way to your table.

Christmas kind of snuck its way into our calenders once again, the entire year passing us by like a whirlwind affair. Now, its time to line your stomachs with traditional Christmas roasts and prepare for the assault of one, too many alcoholic beverages in the course of merry-making. Naughty or nice, I'm sure Santa's too busy overworking his minions to tell.

So, moving on, Oxwell and Co.; the British inspired gastro-pubs rolls out its festive menu in true English style, with traditional roasts and pork crackling to foster the spirit of sharing and caring with a convivial communal dining practice. 

Oxwell & Co. resides in this over-trodden neighborhood of Ann Siang Hill being knocked around mercilessly by the well-heeled crowd, bar-crawling their way through the vicinity and punishing their livers in the midst. Walk in the front door and you're in a wood sheathed interior with minimalistic walls decorated with twisted piping, similarly defiant lamp shadings bouncing off the walls in a free spirited disarray. It's a bohemian space, like a dingy pub gone rogue; and the food here is equally manic.

Since we all know the saying that behind every successful man, there stands a woman. OCF pays respect to the first wife of Sir Stamford Raffles, founder of our humble island; and so aptly too since the restaurant, housed in the picturesque Arts House is sited at the rear of the ominous Sir Stamford Raffles statue along the banks of the Singapore River.

Menus are all prix fixe, with set lunches starting at $38++ and dinner at $88++. The recently introduced Pre-Theatre Menu offers a 2 course option for $38++ and the 3 course at $48++. Sounds like a bargain doesn't it? But there's a catch. Pre-Theatre seating is only available from 6pm-7pm and patrons are required to return the table back by 8pm. So those running on a tight schedule should really consider this as a dinner destination.

Disregard my prejudices towards Antoinette please. A couple of macarons later and I was too quick to call the shots on the establishment. Time evidently helped to settle ill feelings and perhaps soothe out operational hiccups; years later I was back to sample the 4th Anniversary set menu at the local establishment that had taken to expanding its dominion to 2 other outlets outside of its Penhas Road headquarters.

In celebration of its 4th birthday, Chef Pang has rolled out a 4 course set menu available in May for a budget friendly $40++ per pax. The verdict after the jump.
