If you're looking for the best maki in Singapore, Kinki won't be it. But if it's #makiwithaview that you're seeking, the casual establishment sporting stunning panoramic view of the bay area sees little competition in this aspect.
Kinki is famous for two things: their makis and Japanese anime decorum which translates into their convivial dining atmosphere. The space makes use of the abundant natural light and their open-air entertainment quarters on the top deck to shake off the austerity and stuffiness shrouding the dining establishments in the bay area. It's important to note the beverage offerings; this is first and foremost an after-work watering hole. Once you're seated, a spirited menu packed with refreshing sakes and fizzy beers is called to your attention. I would admit that it's either an old-school dining sensibility or a money-making strategy. Needless to say, we welcome the gesture with open arms (and livers), and order carafe of Echigo Tsurukame Junmai from Niigata prefecture. One does have to whet one's appetite, after all.

As if finding a brunch spot worthy of some Sunday sauntering isn't easy enough; The Pelican does some internal revamps to introduce the new ala carte brunch menu focused on classic East Coast American breakfast favourites. Fuelled by the affordable option to pair your meal with a free flow prosecco; it's little wonder that this establishment gets the chops from me.
However, do note that timing is a little tight on the ultimate weekender session and this boozy brunch is available only on Saturdays from 11am to 3pm with Sundays being represented by tight barricades around the restaurants - closed. Added merits include the stunning views of the Marina Bay waterfront area - tranquil waters lap at your feet (well, technically about a grass patch and pavement away) as you sip on that bubbly with little care in the world.

I did mean to talk first about the expansive selection of whiskies and various collectors spirits procured by dark horse of a bar manager Fong Chan Teng (previously from La Maison Du Whisky) - behind the bar; there's just about something great for everyone. A lesson we learn first-handedly by introducing UsQuBa's refreshing Gin & Tonic into the adolescent encyclopedia of our greenhorn tastemaker seated at our table. He loved it. And so did we love our classic Negronis, stirred up using award-winning London Dry Gin, NB Gin and a rather intriguing bottle of sweet white vermouth del Professore from Piedmont, Italy.
I digress. Because, what you're really here for is the food. The menu at UsQuBa (pronounced as us-kew-bah) offers a little for everybody, especially the person curious for fresh insights into New Scottish cuisine. A very detailed food map in the front of the menu depicting the various local produce and zones in and about Scotland; building anticipation for diners as they browse the premium ingredients featured. Chef Guven who helms the kitchen is the enabler in this extraordinary enlightenment process - his portrayal of Scottish ingredients with unique creativity stemming from his tour of Claridge's kitchen, Maze Restaurant and Newport Room, under the mentorship of Thomas Keller.

My previous dining experience at The Pelican had showcased a history of epicurean highlights; unfolding in waves of gustatory pleasures, followed by a extended night capping period that fed my demons.
In this ill-fated episode however, the same dishes did not deliver the same 'wow-factor' it did on the first occasion.
Held in conjunction with the Entertainer , the event at The Pelican entitled us to use our 1-for-1 main course deal. For those of you who have the app or are mulling over the choice (please spare your brain cells and GET IT ALREADY!); you'll be pleased to know that the Entertainer members are entitled to unlimited 1-for-1 Belvedere cocktails when a voucher for a main course is used! Given the Pelican's heftier price tags, the definitely appeals to the penny-pincher side of me. That being said, the award-winning waterfront views makes it worth splashing out at least once in your life.
The Double Atlantic linguine and Clams ($58) garlic, chili flakes and white wine is your pretty generic aglio olio on steroids with a gob smacking amount of clams thrown into the mix. Certainly worth the money if you ask me.
The Ribeye Cap Steak with mashed baked potato ($58) built up a flutter of anticipation with my heavy recommendations from our previous excursion... sad to say, the dish came out looking a little sparse. Beautifully crusted and deftly executed in terms of the doneness, the linchpin on the platter was perfect throughout; however, what disappointed was the smear of mashed baked potato that had acquired a rather parched consistency on its surface. The dish cried out for a bit of jus or reduction to elevate it to higher eminence.
My Skate Wing Chop with burnt lemon butter ($36) was cooked with faultless timing as well but threw my taste buds into panic mode with the heavy hand of salt grains tossed over the delicate white cartilaginous fish. Burnt lemon butter punctuated with salty capers jazzed up the rich flesh and it all made for a terrific dish if it hadn't been for the salt over dosage situation.
With The Pelican's idyllic waterfront settings, for sure, there will be plenty of tourists, but you'll also be rewarded with delightfully cliched but authentic slice of Singapore life alongside the office workers taking chill pills after a stressful day at work. Sit out on the high tables along the outdoor terrace to enjoy the brilliant views and knock back a drink or two.

The Pelican situated along the waterfront that is One Fullerton boosts some amazing views of the harbour and the ever-changing skyline of Singapore. Step into it's cool vicinity and be greeted by inner city cool vibes enhanced by its' fire engine red upholstery and chic booth seatings.
Our choice for the hen's night dinner, we were all set for a full fledged gluttony experience.
Choosing to skip the starters, the ravenous group dove straight into the complimentary Sourdough bread which by my standards was a pretty darn good loaf, crisp crust with chewy moist innards. The unlikely scattering of seaweed throughout the dough reinforcing the "under-the-sea" theme of the dining experience.
Our food quickly arrives at the table. The Pelican platter ($128) catching delightful stares all around, its' huge selection of raw oysters, Alaskan crab, clams, steamed whole lobster, prawns and mussels indulging most of our whims and fancies. As a main, this could feed 2, however if savoured as a starter dish, there's enough to go around for at least 5. Showcasing ingredients that don't appear to have been tampered with, the depth of flavors combined with the ethereally cold serving temperatures made for a luxurious experience; albeit the occasional flying crab and lobster head experiences.
For mains, we settled for the Skate Wing Chop ($36) and the Ribeye Cap Steak ($58). Skate, as I found out is the indigenous name for the Stingray which we locals have grown to love with it being smothered under a blanket of aromatically spiced sambal. In this case, it is served with a burnt lemon butter sauce and fresh herbs, a lighter take on the "classic", helping to accentuate the sweet flesh of the fish. I was sceptical at first, but grew to enjoy the firm, meaty texture of the stingray. Definitely a dish highly recommended. For a restaurant that explicitly focuses on seafood, I found the ribeye cap steak to be exemplary. Heavily marbled, this cut of meat had the flavor and juicy fat of a ribeye, with the tenderness of a tenderloin. The gorgeous plump slice of meat lying seductively on a bed of mashed baked potatoes that entailed another love story on its own. All in all, a fabulous meal for a tidy price and fantastic ambiance to boot. What's there not to like?
